🌮 Spicy Black Bean Tacos

📝 Ingredients

(Makes 2–3 tacos)

  • 1/2 can black beans, drained and rinsed

  • 1/2 tsp olive oil

  • 1/2 tsp smoked paprika

  • 1/4 tsp cumin

  • 1/4 tsp chili powder (or more if you like it hot!)

  • Pinch of salt & black pepper

  • 2–3 small corn or flour tortillas

  • Optional toppings: avocado slices, chopped tomatoes, shredded lettuce, lime wedges, hot sauce, or vegan sour cream

👩‍🍳 Directions

  1. Heat the beans:
    In a small pan over medium heat, sauté the black beans with olive oil and all the spices. Cook for 5–7 minutes, lightly mashing some beans as you stir. Add a splash of water if it gets too thick.

  2. Warm your tortillas:
    Heat them in a dry skillet or microwave until soft.

  3. Assemble your tacos:
    Spoon the spicy black bean filling into each tortilla. Load up with toppings—get colorful with it!

  4. Serve & squeeze:
