π Banana Oat Blender Muffins
Soft, fluffy, and made in under 20 minutes with zero added sugarβthese are the ultimate smart grab-and-go snack.
π Ingredients (makes ~8 mini muffins)
1 ripe banana
1 cup rolled oats
1/2 cup Greek yogurt (or plant-based alt)
1 egg (or 1 flax egg: 1 tbsp flaxseed + 3 tbsp water)
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp vanilla extract
Optional: dark chocolate chips, blueberries

Preheat oven to 350Β°F (175Β°C).
Blend all ingredients in a blender until smooth.
Pour into a greased or lined mini muffin tin.
Bake for 12β15 minutes, or until tops are golden and a toothpick comes out clean.
Let cool slightly & snack away!
